This simple appetizer lets one enjoy the taste of summer, all year round. A variation on the Caprese Salad , it has become quite popular on Corsica. While very easy to make, it provides a lovely presentation to the dinner table, and as the spices and cheese age, their flavors are wonderfully enhanced.

1) Prepare the marinade:

  • In a jar, combine virgin olive oil and dried herbs (Herbs de Provence or Italian).
  • Add small cubes of Feta or Goat cheese to the oil
  • Marinate in the refrigerator for 1-2 weeks before serving (for best favors). Note: When you have limited time, you can quickly marinade the mixture at room temperature for 8-24 hours before serving- results will be almost as good.

2) Combine with tomatoes: (see picture above).

  • When ready to serve, bring marinade to room temperature
  • Prepare tomatoes by either slicing horizontally, or as thin wedges (capturing any juices), and arrange on a platter
  • Arrange chunks of the marinated cheese feta over the tomatoes, then drizzle with the herbed marinade.

3) Enjoy as an appetizer with crusty French or Italian bread, to make sure you can soak up all the juices.

4) As you use up this mixture, you can keep replenishing the cheese, herbs or olive oil for over a month- as long as it is stored in the refridgerator. When you're ready to start a fresh batch, serve the 'aged' marinade as an entree, over plain spagetti pasta tossed with garlic and cooked brocholi. Yumm!
